  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15 ounces) pumpkin purée
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tablespoon maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • Pinch of cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until mixed.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. Blend while gradually drizzling in olive oil until smooth.
  3. Slowly incorporate ice water one tablespoon at a time until desired creaminess is achieved.
