  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat oven to 350°F and prepare a 9-inch square baking dish with butter and parchment paper.
  2. Boil fresh apple cider in a pan until reduced by half (about 5 minutes).
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly mix in the reduced apple cider until well combined.
  5. Gently fold in the flour until just mixed.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
  7. Cool for 5 minutes, then brush melted butter over the top and sprinkle with cinnamon-sugar.
