Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat softened butter and brown sugar until fluffy.
  4. Add eggs one at a time along with apple cider and vanilla; mix until combined.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Drop rounded balls of dough onto lined baking sheets.
  7. Bake for about 12-15 minutes or until edges are golden brown.
  8. For the filling, melt butter in a saucepan over medium heat; stir in brown sugar and heavy cream, boil for 3-5 minutes until thickened; remove from heat and add vanilla.
  9. Once cookies are cool, fill them with caramel by spreading it on one cookie and sandwiching with another.
