  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 3/4 cup water
  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the apple filling by melting diced Gala apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt in a saucepan over medium heat until thickened.
  2. Make tangzhong by whisking together bread flour and water over low heat until it forms a thick paste; set aside to cool.
  3. In a mixing bowl, combine bread flour, yeast, sugar, salt, milk, cream, egg, and cooled tangzhong. Knead until smooth and elastic; let rise until doubled in size (about 1 hour).
  4. Roll out the dough into a rectangle and spread softened butter on top. Evenly layer the apple filling before rolling tightly and slicing into rolls.
  5. Place rolls in a greased baking dish to rise for another 30 minutes. Preheat oven and bake at 350°F for 25-30 minutes until golden brown.
  6. While cooling slightly on a rack, prepare the cream cheese frosting by mixing all frosting ingredients until smooth. Drizzle over warm rolls before serving.
