  • 2 large apples (Granny Smith or Gala)

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350F (180C) and prepare a springform pan by wrapping it in foil and greasing it.
  2. Mix graham crumbs, brown sugar, cinnamon, and melted butter until well combined; press into the bottom of the pan.
  3. Toss sliced apples with brown sugar and cinnamon; set aside.
  4. Beat cream cheese until smooth; gradually add sugars, then mix in cinnamon, cornstarch, vanilla extract, and sour cream. Add eggs one at a time until blended.
  5. Layer half of the cheesecake filling over the crust, followed by apples, then the remaining filling.
  6. Bake in a water bath for about 55 minutes until set around edges but slightly jiggly in the center.
  7. Cool gradually in the oven with door ajar before chilling for at least 4 hours or overnight.
