  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed for streusel)
  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and salt; cut in cold butter until crumbly.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy; add eggs one by one along with vanilla extract.
  5. Alternate adding dry ingredients and milk into the butter mixture until just combined, then fold in diced apples.
  6. Fill muffin cups with batter and top with streusel; bake for 22-25 minutes until golden.
