  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed, for streusel)
  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, brown sugar, oats, cinnamon, and salt for the streusel topping; cut in cold butter until crumbly.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy, then add eggs one at a time followed by vanilla.
  5. Gradually mix in dry ingredients alternating with milk until combined; fold in diced apples.
  6. Divide batter into muffin cups and sprinkle streusel on top.
  7. Bake for 22-25 minutes until a toothpick comes out clean.
  8. Cool before frosting with cream cheese mixture made from softened cream cheese, butter, powdered sugar, vanilla, cinnamon, and salt.
