  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for drizzling

Instructions

  1. Preheat the oven to 325°F and line a cupcake pan with paper liners.
  2. In a bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter for the crust; press into liners and refrigerate.
  3. Mix flour, brown sugar, oats, cinnamon, and nutmeg for the streusel; add melted butter and refrigerate.
  4. Beat cream cheese with sugar until smooth; mix in vanilla, flour, and egg gently.
  5. Fill each crust with cheesecake mixture; top with apple mixture and streusel.
  6. Bake for 28-30 minutes until edges are set. Allow cooling before serving.
