  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Crush the Lotus biscoff cookies and mix with melted butter; press into a springform pan for the crust.
  3. Toss sliced apples with brown sugar, cinnamon, and cornstarch; set aside.
  4. Beat cream cheese, granulated sugar, Greek yogurt, vanilla extract, eggs, and spices until smooth.
  5. Layer half the cheesecake mixture over the crust, add apple slices on top, and pour remaining filling over.
  6. Bake for about 50-60 minutes until set but jiggly in the center; cool at room temperature before refrigerating.
  7. Prepare streusel topping and sprinkle before serving.
