  • 4 cups French bread
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Prepare the apple filling by cooking chopped apples with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch in a saucepan over medium heat for about 5-10 minutes until softened.
  2. Soak the French bread cubes in a mixture of eggs, milk, cream, vanilla, brown sugar, nutmeg, and cinnamon for 15 minutes.
  3. Mix melted butter with maple syrup and chopped pecans to prepare the topping.
  4. Preheat the oven to 350°F (175°C) and line a muffin pan with parchment paper. Fill each cavity with the soaked bread mixture and top with apple filling.
  5. Bake for 10 minutes before adding the pecan topping; continue baking for an additional 12-15 minutes until golden brown.
  6. Serve warm with extra maple syrup if desired.
