  • 12 thick-cut slices of brioche bread
  • 1 ¾ lbs apples (peeled and diced)
  • 4 tbsp salted butter
  • 2 ½ tbsp all-purpose flour
  • 3/4 cup brown sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 4 eggs (room temperature)
  • Vanilla extract
  • Cinnamon
  • Apple pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a saucepan, melt butter, then stir in flour and spices. Add apples, brown sugar, and water; cook until tender.
  3. In another saucepan, combine milk, cream, butter, sugar, salt, vanilla, and spices over medium-low heat. Whisk in eggs one at a time.
  4. Cut brioche into cubes and layer half in the greased pan. Spread half the apple filling on top. Repeat layers.
  5. Pour custard mixture over the layers and sprinkle turbinado sugar if desired.
  6. Bake for 35-40 minutes until golden brown and slightly wobbly in the center.
  7. Cool for at least 10 minutes before serving.
