  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples, grated
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar
  • 2 Tbsp heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, both sugars, sour cream, and vanilla extract until smooth.
  4. Combine wet and dry ingredients until just mixed; fold in grated apples.
  5. Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  6. For icing: melt butter with brown sugar and heavy cream in a saucepan; stir in vanilla and powdered sugar until smooth.
  7. Pour warm icing over the cake before serving.
