  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cut into cubes
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling by simmering chopped apricots, water, and sugar in a saucepan until tender. Stir in lemon juice and let cool.
  2. Preheat the oven to 375°F (190°C). Grease and flour a baking pan.
  3. Make the shortbread crust by mixing flour, sugar, baking powder, and salt with cold butter until crumbly. Add beaten egg and vanilla extract, mixing until combined.
  4. Press most of the dough into the bottom of the pan, spread the cooled apricot filling evenly on top, then crumble remaining dough over it.
  5. Bake for 30–35 minutes until golden brown. Cool completely before cutting into bars.
