  • 1 cup parsnips (diced)

  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste and cook for an additional minute.
  4. Add beef back to the pot along with broth and vegetables.
  5. Season with herbs, salt, and pepper; bring to a boil before reducing heat.
  6. Cover and simmer for about 2 hours until beef is tender.
