  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey sausage as an alternative)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper; spread on a parchment-lined baking sheet. Roast for 15-20 minutes until tender.
  2. Prepare Brussels sprouts by tossing them with olive oil, salt, and pepper on another baking sheet. Roast for 20-30 minutes until crispy.
  3. Boil salted water in a large pot; cook bow tie pasta according to package directions until al dente. Reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced sausage in olive oil; remove from skillet.
  5. Sauté minced garlic in the same skillet until fragrant; add butter, then toss in cooked pasta along with seasoning.
  6. Fold roasted butternut squash, Brussels sprouts, and sausage into the pasta mixture; mix well.
