  • 2 cups bread crumbs
  • 2 eggs
  • 1 cup mozzarella cheese (cubed)
  • Olive oil for brushing

Instructions

  1. Cook the Arborio rice in chicken broth until al dente (15-20 minutes). Allow it to cool slightly.
  2. Mix in grated Parmesan cheese, salt, pepper, and chopped parsley.
  3. Form rice mixture around cubes of mozzarella, compressing gently to hold shape.
  4. Dip each ball in beaten eggs, then roll in breadcrumbs to coat.
  5. Preheat oven to 375°F (190°C) and arrange balls on a parchment-lined baking sheet. Brush with olive oil.
  6. Bake for 20-25 minutes until golden brown and crispy.
