- 4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup chopped parsley
- 2 cups bread crumbs
- 2 eggs
- 1 cup mozzarella cheese (cubed)
- Olive oil for brushing
- Cook the Arborio rice in chicken broth until al dente (15-20 minutes). Allow it to cool slightly.
- Mix in grated Parmesan cheese, salt, pepper, and chopped parsley.
- Form rice mixture around cubes of mozzarella, compressing gently to hold shape.
- Dip each ball in beaten eggs, then roll in breadcrumbs to coat.
- Preheat oven to 375°F (190°C) and arrange balls on a parchment-lined baking sheet. Brush with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
