  • 4 yellow onions, sliced
  • 2 pounds Yukon Gold potatoes, washed and chopped
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese, freshly grated
  • Fresh herbs: chives, thyme, and sage

Instructions

  1. Heat olive oil in a skillet over medium heat and add sliced onions. Cook for 40-50 minutes, stirring occasionally until caramelized.
  2. Boil chopped Yukon Gold potatoes in salted water for 20 minutes until fork-tender.
  3. Drain the potatoes and mash them in a large bowl with butter, half & half (or coconut milk), and salt until smooth.
  4. Combine half of the caramelized onions and Parmesan cheese with the mashed potatoes; mix well.
  5. Transfer to a serving bowl and top with remaining onions and fresh herbs before serving.
