  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • juice from half a lemon (2 tablespoons)
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing on pie)
  • raw sugar for topping

Instructions

  1. Preheat the oven to 425°F and place an empty baking sheet inside.
  2. Peel and slice the apples into thin pieces, tossing them in lemon juice to prevent browning.
  3. In a skillet over medium heat, combine the apples with sugars, flour, salt, cinnamon, and cook until tender but still holding shape (about 20 minutes).
  4. Stir in vanilla extract and cool the filling completely.
  5. Roll out the pie crust into a deep dish. Fill with cooled apple mixture and cover with top crust or create a lattice design; vent if needed.
  6. Brush the top with milk and sprinkle raw sugar before chilling for another 20-30 minutes.
  7. Bake for 15 minutes at high heat then reduce to 350°F for about 45 minutes, covering edges with foil as necessary.
  8. Cool on a wire rack for at least four hours before slicing.
