  • 1 lb Flank Steak
  • Salt and Pepper
  • 1/3 cup Grated Parmesan
  • 1/3 cup Grated Provolone
  • 1/3 cup Italian Breadcrumbs
  • 2 tablespoons Finely Chopped Italian Parsley
  • 2 cloves Garlic (pressed or finely chopped)
  • 2 tablespoons Butter
  • 1 cup White Grape Juice
  • 3 cups Tomato Sauce

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pound the flank steak until thin and season both sides with salt and pepper.
  3. In a bowl, mix together the Parmesan, Provolone, breadcrumbs, parsley, and garlic.
  4. Spread the filling evenly over the steak and roll it tightly into a cylinder. Secure with butcher's twine.
  5. In a Dutch oven over medium-high heat, melt butter and brown the braciole on all sides for about 8 minutes.
  6. Pour in white grape juice to deglaze, then add tomato sauce and bring to a bubble.
  7. Cover and transfer to the oven; roast for about 90 minutes, basting every 30 minutes.
  8. Let rest for 10 minutes before slicing.
