  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoon cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoon milk

Instructions

  1. Cream together room temperature unsalted butter, granulated sugar, and light brown sugar until fluffy.
  2. Beat in eggs and vanilla extract until smooth.
  3. In another bowl, mix cake flour, cornstarch, baking soda, baking powder, and salt; gradually combine with wet ingredients.
  4. Chill the dough for one hour.
  5. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Preheat the oven to 350°F (175°C). Shape cookies by flattening dough around the filling and sealing edges.
  7. Bake for 11-13 minutes until just set; let cool slightly before icing.
