  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 200 grams all-purpose flour
  • 200 grams mozzarella cheese
  • 2 egg yolks
  • 25 grams honey
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 tablespoon fresh parsley
  • Sprinkle of salt

Instructions

  1. Preheat your oven to 160°C (320°F) and roast the garlic wrapped in foil for about 2 hours until soft.
  2. Prepare garlic butter by mixing roasted garlic with softened butter, parsley, and olive oil.
  3. Activate yeast by combining warm milk, yeast, and honey; let it sit for 10 minutes.
  4. In a large bowl, mix flours, sugar, optional milk powder, softened butter, salt, egg yolks, and yeast mixture into a soft dough.
  5. Knead the dough for 15-20 minutes until smooth and elastic; then let it proof until doubled in size (about 1 hour).
  6. Roll out the dough to about 1/4 cm thickness; spread garlic butter evenly and sprinkle with mozzarella.
  7. Roll up tightly into a log and cut into six equal portions; let them proof again for 30 minutes.
  8. Bake at 175°C (350°F) for about 20-25 minutes; brush with leftover garlic butter while warm.
