  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for the dough)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • Garlic butter

Instructions

  1. Roast the garlic by drizzling with olive oil, wrapping in foil, and baking at 160°C (320°F) for about two hours until sweet and soft.
  2. Mix roasted garlic with softened butter and parsley to create garlic butter.
  3. Activate the yeast by combining warm milk, yeast, and honey; let it froth for ten minutes.
  4. In a mixing bowl, combine flours, sugar, milk powder (if using), butter, salt, egg yolks, and the activated yeast mixture to form dough.
  5. Knead the dough for 15-20 minutes until smooth and elastic.
  6. Allow the dough to proof in a warm area for about 90 minutes until doubled in size.
  7. Roll out the dough, spread garlic butter on top, sprinkle mozzarella cheese, then roll tightly into logs.
  8. Cut into portions and let them puff up on a baking sheet for another 30 minutes.
  9. Preheat oven to 175°C (350°F) and bake for 20-25 minutes until golden brown.
