  • ½ teaspoon paprika

  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup (119 g) heavy cream (or coconut cream for a dairy-free option)
  • 1 cup (113 g) mild cheddar cheese, shredded (or vegan cheese)

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Sauté sliced sausage until browned.
  2. Add diced onion, celery, red bell pepper, and minced garlic; cook until softened.
  3. Stir in Cajun seasoning along with salt, black pepper, paprika, and cayenne pepper for 30 seconds.
  4. Pour in chicken broth and add cubed potatoes; bring to a boil then reduce heat to simmer for 20-25 minutes until potatoes are tender.
