  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon to make the crust. Press into the bottom of the prepared pan.
  3. Beat softened cream cheese and granulated sugar until smooth; add eggs one at a time along with vanilla extract. Pour over the crust.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Spread evenly over the cheesecake layer.
  5. For the crumble topping, mix flour, brown sugar, cold cubed butter, and optional pecans until crumbly; sprinkle over the apples.
  6. Bake for about 45 minutes until set and golden brown on the edges; allow to cool completely before cutting into squares.
  7. Prepare caramel sauce by melting sugar with water until golden brown; stir in heavy cream, butter, and salt until smooth. Drizzle over bars before serving.
