  • 1 large head cauliflower
  • 1 (15-oz.) can chickpeas
  • 1 Tbsp curry powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 3 Tbsp extra-virgin olive oil
  • 2 cups cooked white basmati rice (or grain of choice)
  • Fresh cilantro leaves
  • Fresh parsley leaves
  • 1/4 cup tahini (sesame seed paste)
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 425°F.
  2. In a bowl, mix curry powder, paprika, ground cumin, salt, and pepper.
  3. Toss cauliflower florets with 2 tablespoons of olive oil and half the spice mixture; spread on one baking sheet.
  4. Rinse and dry chickpeas; toss with remaining tablespoon of olive oil and remaining spice mixture; spread on another baking sheet.
  5. Roast both sheets for about 30 minutes, tossing halfway through until golden brown.
  6. Blend cilantro, parsley, tahini, lemon juice, garlic, cumin, salt, and water to create Green Tahini Sauce.
  7. Assemble bowls: Serve rice topped with roasted cauliflower and chickpeas; drizzle with sauce.
