  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Prepare a large pot of boiling water and cook the cheese tortellini according to the package instructions until al dente.
  2. While the pasta cooks, slice the mushrooms and chop the fresh sage.
  3. In a skillet over medium-high heat, combine 1 tablespoon of butter with olive oil. Add the chopped sage and cook until crisp, about one minute. Remove from skillet.
  4. In the same skillet, add another tablespoon of butter, followed by sliced mushrooms and minced garlic. Sauté for approximately five minutes until golden brown.
  5. Once the tortellini is cooked and drained, add it to the skillet with mushrooms. Stir in remaining butter, parmesan cheese, and crispy sage. Toss well to coat and season with salt and pepper to taste.
