  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves

Instructions

  1. In a large bowl, mix mascarpone cheese and heavy cream until smooth and fluffy.
  2. Stir in cherry juice and vanilla extract until well combined.
  3. Fold in granulated sugar mixed with cherry preserves, then gently stir in chopped cherries.
  4. In a shallow dish, quickly dip ladyfingers in cherry juice and arrange at the bottom of a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours or overnight to set.
  8. Before serving, dust with cocoa powder and garnish with dark chocolate shavings.
