  • 2/3 cup pumpkin puree (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large egg yolks (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cups + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup chopped chocolate or chocolate chips

Instructions

  1. Preheat oven to 350°F (180°C) and line two baking trays with parchment paper.
  2. Brown the butter in a stainless steel pan until nutty and golden. Cool in the fridge until it reaches about 75°F.
  3. Press paper towels into pumpkin puree to absorb excess moisture.
  4. Whisk cooled butter with granulated and brown sugars until sandy.
  5. Mix in egg yolks, vanilla, and dried pumpkin puree.
  6. Gently fold in flour, pumpkin spice, baking soda, salt, and chocolate chips until just combined.
  7. Shape dough into balls (about three tablespoons each) and place on trays.
  8. Bake for 9-13 minutes until edges are golden but centers are slightly underbaked.
  9. Cool on wire racks before serving.
