  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the chicken: Combine olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper in a bowl. Add chicken and coat thoroughly. Refrigerate for at least 15 minutes.
  2. Cook the chicken: Heat a skillet over medium heat with olive oil. Cook chicken for 6-7 minutes per side until golden brown and reach an internal temperature of 165°F (75°C). Let rest before slicing.
