  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the vanilla wafer crumbs and brown sugar. Add melted butter and mix until combined. Press into the bottom and sides of a pie dish, then bake for about 10 minutes to set.
  2. In another bowl, beat together mascarpone cheese and confectioner’s sugar until smooth. Mix in vanilla extract, ground cinnamon, and lemon zest. Fold in ricotta cheese until blended.
  3. Whip heavy cream until soft peaks form; gently fold into the cheese mixture along with 1 cup of mini chocolate chips.
  4. Once the crust has cooled, pour the filling into it and smooth out the top with a spatula. Sprinkle remaining chocolate chips on top.
  5. Cover with plastic wrap or foil and chill in the refrigerator for at least 8 hours or overnight before serving.
