  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix the vanilla wafer crumbs, brown sugar, and melted butter. Press into the bottom and sides of a pie dish.
  2. Bake the crust for about 10 minutes until golden. Let cool completely.
  3. In another bowl, combine mascarpone cheese, confectioner’s sugar, vanilla extract, cinnamon, lemon zest, and ricotta cheese until smooth.
  4. In a separate bowl, whip the heavy cream until soft peaks form and gently fold it into the cheese mixture with 1 cup of mini chocolate chips.
  5. Pour the filling into the cooled crust and smooth out the top. Sprinkle remaining chocolate chips on top.
  6. Chill for at least 8 hours before serving.
