  • 250g all-purpose flour
  • 30g sugar
  • 10g fresh yeast
  • 150g eggs (about 3 large)
  • 165g unsalted butter
  • 25 cl whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 50g sugar (for custard)
  • 20g cornstarch
  • 120g mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Mix briefly.
  2. Add beaten eggs and knead for about 2-3 minutes until thick and smooth.
  3. Gradually incorporate softened butter and knead until the dough is dense and slightly sticky (up to 20 minutes).
  4. Let the dough rise in a warm place covered for about 2 hours until doubled in size.
  5. For the custard, warm milk with butter and vanilla pod. Whisk together egg yolks, sugar, cornstarch, and flour in another bowl.
  6. Slowly combine hot milk mixture with egg mixture while whisking continuously.
  7. Return to low heat and whisk until thickened; refrigerate until cool.
  8. Roll out risen dough into a rectangle; spread half of the cooled custard on one side and sprinkle with chocolate chips.
  9. Fold over the dough, cut into eight rectangles, and let rise for another two hours.
  10. Preheat oven to 350°F (180°C), brush each brioche with an egg wash, bake for 10-12 minutes until golden brown.
  11. Brush baked brioches with a simple syrup made from sugar dissolved in water.
