  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cups warm water
  • Pear
  • Pearl onions
  • Cherry tomatoes
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Plenty of olive oil (a few Tbs.)

Instructions

  1. In a large mixing bowl, whisk together bread flour, yeast, and coarse salt. Add warm water and mix until a shaggy dough forms. Cover and let rise overnight on the counter.
  2. The next day, oil a casserole dish and gently transfer the risen dough into it. Stretch to fit snugly and create dimples on top. Cover and let rest for 2 hours.
  3. Preheat oven to 400°F (200°C). Decorate the focaccia with rosemary sprigs and vegetables to create a tree shape.
  4. Sprinkle lightly with coarse salt and bake for about 25 minutes until golden brown.
  5. Allow to cool slightly before slicing and serving.
