  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups apple vinegar (Burgundy or bold)
  • 2 cups beef stock
  • Fresh thyme
  • Bay leaves
  • Frozen pearl onions
  • Cremini mushrooms, quartered

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, cook the bacon until crispy. Transfer to a bowl.
  3. Season beef with salt and pepper; sear in the bacon fat until browned on all sides. Remove and set aside.
  4. Sauté onions and carrots in remaining butter until softened. Add garlic, tomato paste, and flour; cook briefly.
  5. Pour in apple vinegar to deglaze the pot. Add beef stock, return beef and bacon, then add herbs. Cover and bake for about 2 ½ hours.
  6. Sauté mushrooms in remaining butter; add pearl onions until golden brown. Stir into the bourguignon and cook for another hour until tender.
