  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature

  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream together softened butter and sugar until fluffy. Add eggs one at a time along with vanilla and coconut extracts.
  4. Alternately add dry ingredients and coconut milk to the butter mixture, starting and ending with dry ingredients.
  5. Pour batter into prepared pans and bake for 25–30 minutes or until golden brown.
  6. Cool cakes in pans before transferring to wire racks.
  7. For frosting, beat cream cheese and powdered sugar until smooth; then fold in whipped cream.
  8. Layer cooled cakes with frosting between each layer and cover the entire cake with frosting, pressing shredded coconut onto the sides and top.
  9. Chill in the refrigerator for at least an hour before serving.
