  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half (or whole milk)
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a 9×13-inch dish.
  2. In another bowl, beat softened cream cheese with powdered sugar and coconut extract until smooth. Fold in thawed Cool Whip and spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened. Pour over the cream cheese layer and smooth out.
  4. Top with another layer of Cool Whip and sprinkle with toasted shredded coconut.
  5. Cover and refrigerate for at least six hours before serving.
