  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon
  • 2 cups coconut flakes
  • 24 ladyfingers

Instructions

  1. Whip egg yolks with powdered sugar until pale. Incorporate mascarpone, coconut cream, and half the coconut milk.
  2. In a separate bowl, whip heavy cream with remaining powdered sugar until stiff peaks form. Fold into the egg mixture.
  3. Mix sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon in another bowl.
  4. Dip ladyfingers briefly into the soaking mixture.
  5. Layer soaked ladyfingers in a pan and top with half the cream mixture; repeat layers.
  6. Dust with cinnamon and sprinkle with coconut flakes.
  7. Refrigerate for at least 12 hours before serving.
