4 medium-sized sweet potatoes
1 cup fresh cranberries (or frozen)
2 medium apples (Granny Smith or Honeycrisp)
1/4 cup brown sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C). Wash the sweet potatoes, poke holes in them with a fork, and bake on a lined baking sheet for 45 minutes or until tender.
Allow them to cool slightly before cutting each potato in half lengthwise. Scoop out most of the flesh into a bowl.
Mix the scooped sweet potato flesh with chopped apples, fresh cranberries, brown sugar, cinnamon, butter, and salt until combined.
Spoon the filling back into the potato skins and bake at 350°F (175°C) for an additional 20 minutes.
