  • 8 ounces fresh cranberries
  • 1/2 cup water
  • 6 tablespoons granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup + 1 tablespoon all-purpose flour
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • optional: powdered sugar sprinkled on top

Instructions

  1. Prepare the cranberry filling by boiling cranberries with water and 6 tablespoons of sugar until they break down. Set aside to cool.
  2. Preheat oven to 325°F. Combine melted butter, vanilla extract, 1/4 cup sugar, and salt in a bowl, then mix in the flour to form a dough. Press into a lined 9-inch baking dish.
  3. Bake crust for 16-18 minutes until lightly browned, then poke holes in it and let cool.
  4. For the lemon layer, whisk together 3 tablespoons of flour, remaining sugar, eggs, and lemon juice.
  5. Pour cooled cranberry filling over the crust, followed by the lemon layer. Bake at 350°F for 43-45 minutes until set.
  6. Cool completely before slicing into squares.
