  • 34 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsps tomato paste
  • 1 tsp sea salt
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange tomato wedges and whole garlic bulbs on a baking sheet, drizzle with olive oil, season with salt, and roast for about 30-35 minutes until caramelized.
  2. In a pot, sauté chopped onion over medium heat until soft and translucent.
  3. Once the vegetables are roasted, squeeze the soft garlic into the pot with onions along with the roasted tomatoes. Add vegetable stock, tomato paste, seasoning blend, and smoked paprika; simmer for about 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender. Stir in heavy cream and heat gently without boiling.
  5. Adjust seasoning as needed before serving hot.
