  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or substitute whole milk or half-and-half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and sauté minced garlic until fragrant. Stir in the flour to create a roux.
  4. Gradually add heavy cream while stirring until the sauce thickens (about 5 minutes). Mix in Parmesan cheese, thyme, salt, and pepper.
  5. Combine sliced potatoes with the sauce in a bowl, tossing gently until coated.
  6. Arrange potato slices upright in a greased baking dish and pour any remaining sauce over top.
