  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat and sear the chicken for about 5–6 minutes per side until cooked through (internal temperature of 165°F/75°C). Remove from skillet and set aside.
  2. In the same skillet, reduce heat to medium, add butter and sauté minced garlic for about 30 seconds. Add orzo and toast for 1–2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth; bring to a simmer. Cover and cook for about 10 minutes until orzo is tender.
  4. Pour in heavy cream and stir in grated Parmesan until melted. Add chopped spinach and stir until wilted.
  5. Return chicken to the skillet to heat through for about 2 minutes before serving.
