  • 2 sheets of thawed puff pastry (8½ oz each)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups warm whole milk
  • 6 large egg yolks
  • 1 vanilla bean (seeds scraped) or 2 tsp vanilla bean paste
  • 4 Tbsp cold unsalted butter (cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry sheets and prick with a fork. Place on baking trays lined with parchment paper, cover with parchment, and weigh down.
  2. Bake for 35-45 minutes until golden brown. Cool completely.
  3. Trim edges to fit an 8×8-inch square pan.
  4. In a saucepan, whisk together sugar, cornstarch, and salt, then add egg yolks.
  5. Warm milk in another saucepan, then temper the egg mixture by slowly adding warm milk while whisking.
  6. Return the mixture to heat and cook until thickened; remove from heat and add vanilla seeds and butter.
  7. Assemble by layering one pastry sheet in the pan, pouring in custard, topping with another pastry layer, covering tightly, and refrigerating for at least four hours or overnight.
  8. Slice into squares, dust with powdered sugar, and serve.
