  • 1 pound chicken tenderloins (or chicken breasts, cut into strips)
  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • oil for frying

Instructions

  1. Set up your breading station with four shallow bowls: one with flour mixed with chili powder, salt, and pepper; one with whisked eggs and water; one filled with coconut flakes; and one with panko breadcrumbs.
  2. Dip each chicken tender into the flour mixture, then the egg wash, followed by the coconut flakes, and finally coat with panko breadcrumbs.
  3. Heat oil in a skillet over medium heat and fry the coated tenders in batches until golden brown on both sides (about 3-4 minutes per side).
  4. Drain on paper towels and serve warm with sweet chili sauce.
