  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • ¼ cup breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable or canola oil (for frying)

Instructions

  1. Prepare corn by draining canned corn or thawing and drying frozen corn.
  2. In a large bowl, whisk the egg until blended.
  3. Mix in flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper until well combined.
  4. Fold in the corn gently until evenly distributed.
  5. Shape the mixture into small balls or discs.
  6. For frying: Heat oil in a deep pan to 350°F (175°C) and fry bites for about 2–3 minutes per side until golden brown. For baking: Preheat oven to 400°F (200°C), place bites on a prepared baking sheet, and bake for about 15–20 minutes.
  7. Drain excess oil if frying and serve warm.
