  • 2 pounds ground beef (or ground chicken)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire roasted tomatoes
  • 8 oz tomato paste
  • 4 oz diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • 23 cups chicken or beef broth
  • 6 oz cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Chop onions and poblano peppers.
  2. Brown the ground beef in a skillet over medium heat until fully cooked.
  3. Transfer the meat to the crockpot and add chopped onions, poblano peppers, crushed tomatoes, tomato paste, butter, green chilies, hot sauce, bay leaves, spices, and enough broth to achieve desired consistency.
  4. Cover and cook on low for about two hours.
  5. Stir in cream cheese until melted, then mix in shredded cheddar cheese.
  6. Serve hot garnished with cilantro, green onions, avocado slices, and Greek yogurt.
