  • 1/2 cup softened butter
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, salt, and baking powder. Gradually mix this into the wet ingredients until just combined.
  5. Scoop out nine cookie balls onto a prepared baking sheet and gently flatten them. Create a small indentation in the center of each cookie.
  6. For the filling, melt the butter and combine with brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt. Spoon this mixture into the center of each cookie.
  7. Bake for about 8-9 minutes until edges are golden but centers remain soft. Cool slightly before transferring to a wire rack.
