  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Spray a 2-quart baking dish with nonstick spray or grease with butter. Layer potato slices in three rows and add onion slices between layers.
  3. In a saucepan over medium heat, melt butter. Whisk in flour, then gradually add almond milk, stirring until thickened.
  4. Lower heat and mix in shredded cheddar, garlic powder, salt, and pepper until well combined.
  5. Pour sauce over the potatoes and onions evenly.
  6. Cover with foil and bake for 45 minutes to steam the potatoes.
  7. Remove foil, add gruyere and parmesan on top, then bake for an additional 30-45 minutes until golden brown and bubbly.
  8. Garnish with fresh parsley before serving.
