  • 140 g unsalted butter (cold)
  • 24 g white grape juice (optional)
  • 1 cup ice water
  • 113 g unsalted butter (for filling)
  • 56 g bittersweet chocolate
  • 21 g Dutch process cocoa powder
  • 1 tsp espresso powder
  • ½ tsp salt
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly. Stir in grape juice and ice water until just combined. Chill before rolling out.
  2. Preheat oven to 350°F (175°C). Roll out dough into a pie pan, prick with a fork, and bake for about 20 minutes until lightly golden.
  3. For the filling, melt butter and chocolate in a saucepan over low heat. Stir in cocoa powder, espresso powder, and salt.
  4. In another bowl, whisk together milk, sugars, cornmeal, eggs, and vanilla until smooth. Combine with melted chocolate mixture.
  5. Pour filling into the pre-baked crust and bake for about 60-70 minutes until set but slightly jiggly in the center.
  6. Cool completely before slicing and serve as desired.
