  • 12 large eggs
  • ½ cup mayonnaise (organic)
  • 4 ounces cream cheese (full fat)
  • 2 tablespoons stone-ground mustard
  • 1 tablespoon white grape juice vinegar
  • 1 tablespoon red hot sauce (optional)
  • 1 teaspoon chopped chives
  • ¼ teaspoon paprika or cayenne pepper

Instructions

  1. Boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then remove from heat and let sit for 10-12 minutes. Cool, peel, and separate yolks from whites.
  2. In a food processor, blend egg yolks with mayonnaise, cream cheese, mustard, vinegar, and optional hot sauce until smooth.
  3. Chop half of the egg whites and fold them into the yolk mixture along with chopped chives. Season with salt and pepper.
  4. Transfer to a serving bowl and garnish with paprika or cayenne pepper.
